As to air, if you are going to buy refundable tickets, then buy early. If you are going to buy non-refundable tickets, then I would not buy more than 90 days in advance (to reduce the chance of something coming up and you cannot go).
If you are not worried about the plane selling out, then purchase your ticket with a credit card less than 60 days in advance. That way if something happens, you still have time to dispute the charge.
If you are going during a vacation period (especially Thanksgiving or Christmas), you might be better off purchasing your tickets 6 to 11 months in advance.
As for the hotel, again, is your deposit refundable? If so, purchase early. If not, are you trying to get a room at a very popular hotel (are you worried the hotel will sell out)? If so, buy early.
If you are not worried about the hotel selling out, I would not buy more than 90 days in advance (same reason as above). Even better would be to wait until less than 60 days in advance and use a credit card (same reason as above).

If your departure date in May is flexible hold out as long as possible for special deals. If not, start looking for special deals now but book your flight and hotel 90 days out for peace of mind.

Check now!! You don’t necessarily book it but, check it out. Why not? You may be more aware of the routing from Nashville to Mexico. If not, best to check now. If you have a stop in between then the whole plane is not for Nashville to Mexico. If you have a direct flight then it presents a different problem, how many direct flights are there, when do they go, etc.
Find out online and then compare to your largest travel agency in Nashville. There could be good packages, plane and hotel. You never know. Compare both packages and separate hotel and airfare.
Another factor is that hotels raise their rates periodically. I travel to asia a couple times a year. And the site I use are raising their rates on November 1, 2007. That’s their contract renewal date with the hotels.
So if you use Expedia.com or Orbitz.com or hotels.com, that is great. Try or, they are search engines for hotels, car rentals and airfares. They will show the lowest rate so you have to look at each hotel or resort to see what they are advertising as their lowest rate and when it is good for.
Ideally, anywhere from 3-6 month is good depends on the destination and the starting point and who serves both points and etc.
Good luck and have fun
